Coffees from Yemen have always been my favorite and this Mocca Kholani is no exception! As is typical for the Sana’ region, the Mocca Kholani has a delicate but layered with complexity. Expect notable flavor overtones of Mango and Banana with layers of bakers chocolate and peanut. There is a slight leather undertone to this coffee which might not be noted in the flavor profile but which adds a certain complexity common to naturally produced coffees from Yemen. This Heirloom coffee is grown at high altitude and sun dried on roof tops on raised beds overlooking the terraced coffee growing fields below. The roasting method for this coffee is typically lighter to allow for the greatest amount of flavor and complexity. As with most Natural Coffee, roasting can be a bit tricky. Second by second control is required to roast this very special coffee…but the results are worth it!
