1What is "Slow Roasting"?"
Slow Roasting isn't exactly what it sounds. The concept of slow roasting is born of the belief that coffee developes a creamier, more rounded taste by slowing down the roasting process. This is partially true however WHEN to slow the roast and by how much is the trick. A roast profile that takes too long to achieve a particular temperature or that draws out the final rise of heat will produce a coffee that has a flat - baked flavor, one lacking in essential acidity. This balancing of heat and time curvature is where the art of coffee roasting lies.
